Lemon Burst Poke Cake


This fantastic Lemon Burst Poke Cake is very light, tangy and refreshing. Are you hooked yet?  I was after I took my first bite, which turned into 2 pieces, and had to literally s t o p myself before I ate the whole cake! 

This Lemon Burst Poke Cake is great for any BBQ, Potluck, Special Event and it reminds of sunshine and summer time.   

Ingredients
   Cake Layer
  • 1 White Cake baked in a 9x13 pan

   Lemon Curd Layer
  • 1 1/3 cup Lemon Curd

   Lemon Pudding Layer
  • 2 boxes Lemon pudding dry mix
  • 2 cups cold milk or vanilla almond milk

   Cool Whip Layer
  • 1 - 8 oz Regular or Fat-Free Cool Whip
  • or
  • 2 cups whipping cream
  • 1/2 cup powdered sugar
  • 1 tablespoon vanilla

Instructions
   Cake Layer
  1. Prepare and bake cake mix as directed on package for 13x9-inch baking pan.
  2. Remove from oven. Poke holes down through cake with round handle of wooden spoon. Holes should be at 1-inch intervals.

It was so easy to make plus it's such a great lemon dessert!! This was a huge hit!!! Light lemon flavor. Really yummy. This easy & simple no bake triple layer lemon pudding pie is the perfect summertime dessert! You only need 5 ingredients for a sweet and creamy lemon pudding pie that is no bake and so simple to make. Dark Chocolate Walnut Cookies

I just finished making these and they are by far one of the best cookies I have ever made....and I make a LOT of cookies!  I used regular semi-sweet chocolate chips (I didnt have any of the bittersweet) and I substituted hersheys special dark cocoa for the regular cocoa. I also found that if you let the dough rest on the counter for a half an hour or so, it thickens up and makes the cookies spread less and come out even better! I was able to get 3 dozen using a small cookie scoop. I will use this over and over I am sure! It’s everything we love about our dark chocolate walnut cookies. These babies are prime for dunking in a glass of ice-cold milk.
